"Jas" means camps in Occitan and refers to small stone huts which are often erected as shelters for shepherds. The shepherd's wives were often called "Les belles". The raisins of this wine are fermented in steel tanks at controlledtemperature for 3 weeks with daily agitation (pumping over).
